Borlotti beans are widely used in Italian cooking as well as Colombian cooking (where they are known as cranberry beans), they have a semi-sweet flavour with a smooth creamy texture. Borlotti beans are in protein and fibre and help to reduce cholesterol and blood pressure levels. They make a fantastic vegetarian source of protein. They are also naturally high in folate, a nutrient widely used by women preparing for pregnancy and during early-stage pregnancy. They can be used to make a lovely bean stew or added to soups, salads and dips. To cook, prepare the beans by soaking for 6-10 hours. Then drain and cook in water using three times more water than beans. Cook until soft and tender, 2-3 hours. Store dry beans in an airtight container and keep in a cool, dry place.
