The firmest of the three and the one that keeps its crunch. It stays jet black in the pan, so it reads as deliberate on the plate rather than as leftover rice, and it is earthier and a shade sweeter than the red. Rinse, then simmer one cup in two cups of water for 12 minutes with the lid on.
