The mildest quinoa and the one to start on. Royal is the large grade, and it cooks up softer and fluffier than red, taking on whatever it is cooked in, so it stands in for rice or couscous without the table noticing. Rinse, simmer one cup in two cups of water or stock for 12 minutes with the lid on, then fluff.
