Stone milled Australian wholemeal/wholewheat flour made in Australia's finest flour mill and used by professional chefs. Wholemeal flour retains some of the outer bran resulting in a more robust flavour and texture. It is a high protein wheat flour that is best used for producing high-quality bread and pastries. This flour contains 13% protein. The protein in the flour reacts with yeast and sourdough starter culture during the fermentation process. This results in bread with a better rise. It can also be used to make classic cakes, cookies and pancakes. Store in an airtight container and keep in a cool, dry place.
